Lemony Lemon Cake

This is a classic cake that is quick and easy to make. I love mixing it up and using limes.It turns out just as yummy but has a bit of a twist. 

Ingredients 

  • 125g butter
  • 250g caster sugar
  • 2 eggs
  • 185g self saising flour
  • 60g extra caster sugar 
  • rind and juice of two lemons


Method

  1. Cream butter and sugar together in a large mixing bowel
  2. Add the eggs one at a time
  3. Sift flour and add alternatively with milk
  4. Add the grated rind and mix well
  5. Grease a round cake tin and pour in cake mixture
  6. Bake at 180° for 40-45 minutes
  7. For icing mix the lemen juice and extra sugar in a bowel
  8. Pour over the cake while it is still warm and leave it to cool
