
Lemony Lemon Cake
This is a classic cake that is quick and easy to make. I love mixing it up and using limes.It turns out just as yummy but has a bit of a twist.

Ingredients
- 125g butter
- 250g caster sugar
- 2 eggs
- 185g self saising flour
- 60g extra caster sugar
- rind and juice of two lemons
Method
- Cream butter and sugar together in a large mixing bowel
- Add the eggs one at a time
- Sift flour and add alternatively with milk
- Add the grated rind and mix well
- Grease a round cake tin and pour in cake mixture
- Bake at 180° for 40-45 minutes
- For icing mix the lemen juice and extra sugar in a bowel
- Pour over the cake while it is still warm and leave it to cool
